La paraula oli deriva de l&#8217;\u00e0rab i significa \u201csuc de l&#8217;olivera\u201d. L&#8217;oli d&#8217;oliva \u00e9s un dels pilars de la nostra gastronomia, i t\u00e9 infinitat d&#8217;usos i propietats a m\u00e9s de les aliment\u00e0ries, com ara medicinals o cosm\u00e8tiques.<\/p>\n<p>Hi ha diverses raons cient\u00edfiques per a recomanar l&#8217;oli d&#8217;oliva com a greix culinari: <strong>no cont\u00e9 colesterol<\/strong> i t\u00e9 <strong>baix contingut d&#8217;\u00e0cids grassos saturats<\/strong>. El greix monoinsaturat que cont\u00e9 permet que sigui m\u00e9s resistent a la calor que els \u00e0cids grassos poliinsaturats dels olis de llavors, que es degraden amb m\u00e9s facilitat. Aix\u00ed, l&#8217;oli d&#8217;oliva es pot reutilitzar en fregits sense patir massa alteracions; resisteix b\u00e9 l&#8217;escalfor entre 210 i 220 \u00baC.<\/p>\n<p>L&#8217;oli d&#8217;oliva, sobretot si \u00e9s verge, cont\u00e9 quantitats apreciables de subst\u00e0ncies (betacarotens, alfatocoferol, polifenols) riques en <strong>antioxidants<\/strong>, que tenen un efecte protector davant l&#8217;oxidaci\u00f3, que es relaciona amb l&#8217;envelliment i amb reaccions implicades en malalties o degradacions del cos hum\u00e0.<\/p>\n<p>L&#8217;oli d&#8217;oliva provoca un augment del colesterol tipus HDL i un descens de l&#8217;LDL, responsable de l&#8217;acumulaci\u00f3 de dip\u00f2sits de colesterol en els vasos sanguinis, amb la conseg\u00fcent aparici\u00f3 de malalties coron\u00e0ries.<\/p>\n<p>L&#8217;oli d&#8217;oliva tamb\u00e9 t\u00e9 <strong>propietats antitromb\u00f2tiques<\/strong>, frena la formaci\u00f3 de la placa d&#8217;ateroma als vasos sanguinis, que derivaria en una obstrucci\u00f3 de les art\u00e8ries, segons l&#8217;estudi <a href=\"http:\/\/predimed-es.weebly.com\/\" target=\"_blank\" rel=\"noopener\">Predimed<\/a> que analitza les propietats de la <strong>dieta mediterr\u00e0nia<\/strong>.<\/p>\n<p>El control metab\u00f2lic de la diabetis millora si se substitueix la tradicional dieta diab\u00e8tica baixa en hidrats de carboni per una dieta rica en greix monoinsaturat.
